I trying to change template menus to my language (greek) but when I write the greek words and press save it appears "??????"

I have install the quick start template.

Please go to phpmyadmin then open your database, check table __menu and choose structure, then edit "title" field. Please check it's Collation then select 'utf8_general_ci' or 'greek_general_ci'

The Collation was latin1_swedish_ci and I change it to utf8_general_ci and everything is now ok.

I see that all fields in databse has Collation latin1_swedish_ci. How can I change all to utf8_general_ci ?

what is the sql command ?

this change will affect my whole site ?

Please export sql database, and replace all "latin1_swedish_ci" to "utf8_general_ci", then import that sql file again.
