Is it possible to duplicate/copy a SobiPro Section such as Resorts and call it another name as a new section?

I think that it is impossible to duplicate/copy a SobiPro Section to another section.

I want to use the slider to only feature items from a particular sub-section of Resorts, and not use the whole Resorts Section.
At present it only lets you choose a complete section. Any ideas?

I understand your mean but the slider module is not supported to display items from categories now.
